Great Stuff
I think it makes your pasta much lighter than regular flour. I made a white lasagna with fresh pasta that we had enjoyed in Assisi and it tasted almost as wonderful as the one we had at the restaurant. When they gave me their recipe they emphasized that they always use homemade pasta and it does make such a difference!

Using this flour, what are the directions for pizza dough?

BEST ANSWER: I have been experimenting with this flour. I mix it 50/50 with white wheat flour for wonderful pizza dough. Start with your original recipe but use 25 - 30% Italian flour and the rest your original flour. Go from there and adjust as needed. If you used 100% Italian style flour you would have bubble gum. It makes fantastic pizza dough. I love it.
