Great knife incredibly sharp.
This knife is wonderful but be careful. Being smaller and shorter than a chefs knife it is not good for chopping. But, great for chopping onions pepper slices eggplant

Loved this knife until...
This was by far my favorite knife in the kitchen until after about 8 months of use the handle cracked and a small separation formed between the wood and the tang. Very disappointed considering the price and the fact that I was meticulous about hand-washing this knife after every use. After I noticed the crack in this knife I decided to check my other Wusthof Epicure knives and discovered that the handle had also cracked on my 3 1/2 inch paring knife.

Great everyday knife
I love the weight and balance of this knife. I have other German knives and 3 Shuns but nothing is as natural as using this 6"" chefs knife. It's the perfect size for everyday use and easy to hone. I brought it over to my mom's house this weekend for her to try out. She has a Cutco set and the chefs knife does not compare in balance and feel. Once my mom got her hands on this one, she was sold and is getting one for herself! The reason I gave the quality a 4 instead of a 5 is that I had to look through several knives before finding one that didn't have a gap between the steel tang and handle at the butt of the knife. Otherwise it is very impressive. I just bought the Epicure santoku as well before the stores sell out

This knife is your new fave!
I love this knife! I have several beautiful high-end knives from Berti, Cutco, Shun, and one of the Bob Kramer - Sur La Table knives, and this has rivaled every one of them and surpassed a few...to be one of my absolutely faves.

I really thought I would just use this sparingly, but I use it often - probably more than all of the others. It feels great in your hand, it's perfectly proportioned, it's RAZOR sharp and holds it's edge forever, and it is a sturdy workhorse.

This knife has turned out to be one of my very favorites. It is an unbelievably terrific value for the quality, it's worth every penny and then some

"Wusthof 6"" epicure chef knife"
I love this knife! My sister has an older version, and I was hesitant to spend so much money on a knife. But, when I looked at the handle and then tried it out in the store, I just had to buy it. I got it on sale, and now it's even less money on sale.
The knife has a great feel, a great weight. I love the curved edge where my fingers go when I use the pinch grip. And it's so versatile. I use it for almost all my cutting and prep. And now I'm going to order the 7"" santoku

"Beautiful, sharp knife"
With a kitchen full of dull, old knives, I finally decided to upgrade, despite fears that I might hurt myself with an actual sharp knife in my hand. I'm so glad I listened to the reviews. This knife is the perfect size for slicing and chopping. It's well balanced, with plenty of heft for chopping, but without feeling heavy. The handle is so comfortable I can't get over it. You will not regret this purchase

Beautiful knife
I do not have a set of any brand of knife, but instead I have a collection of different types from different companies. I do prefer the Wusthof brand more than others so far. I wanted a Chef's knife and when this one was on sale I decided now was the time. I read the reviews before I made the final click. Having now used the knife several times I agree with what was mentioned about the knife; nice weight, balanced, ease of slicing and as a bonus, very attractive to look at...I would recommend this Chef's knife to anyone

Sharpening Issues?

Sounds like a great knife - what happens to the ceramic coating IF you need to sharpen it. Thank you.

BEST ANSWER: Nothing will happen to it. The bottom edge of the blade (about 1-2mm) is not treated with the coating, so the edge can be sharpened again and again with no negative results
Do you need to use a steel?

Are you able to use a steel on this knife to keep the edge or do you not need this and it stays sharp? What kind of sharpener does anyone recommend?

BEST ANSWER: Yes, you can sharpen and hone this knife like any other knife. Because it is a Wusthof knife, I suggest you use a Wusthof steel and sharpener
Does this knife have the ""rocking"" motion like the Miyabi

BEST ANSWER: This chef's knife-like most-does have the rocking motion, but because the blade is not as curved as the Miyabi blade, the rocking won't be as fluid and pronounced

BEST ANSWER: These knives-like most western knives-are a double beveld adge grind knife.They are roughly 1/8"" at the spine
