Great knife, very versatile yet choppings still cling to blade
I LOVE this knife. It cuts so well. I have found one can run the blade parallel to the cutting board surface and seamlessly scoop up nearly all of one's cuttings for transference to one's pan!

Alas, many of the cuttings still cling to the blade: onions, peppers, carrots, shallots, garlic--potatoes are the worst. So if one is contemplating purchasing this model specifically for the absence of cuttings clinging to the blade as I was persuaded, don't get your hopes up.

Still, overall, it's a dream. It deserves 5 stars yet when it largely FAILS to discourage cuttings from clinging to the blade as this model's attributes are pitched, well, it's disappointing...

Love my santoku
I own an 8" Miyabi Evolution Chef's Knife and was interested in a santoku for those times when I want a straight knife edge for chopping rather than the rocking motion of the chef's knife. I adore my chef's knife, so I knew I wanted another of the same family of knives. I actually expected to get the 7" santoku, but when I tried it out I quickly realized that despite the different shape it felt very much like my chef's knife. The 5.5" santoku, however, was something of a revelation -- incredibly lightweight (its handle is the size of the paring knife handle, rather than the larger chef's knife handle), agile, and a joy to chop with. I've never regretted that decision; the smaller santoku makes much more sense for my knife collection since it fulfills a clearly different role than my chef's knife. And, like all the Evolution line, it's beautifully constructed, holds its edge, and still looks and functions like new.

First Santoku knife
I bought the Miyabi after a "date night" cooking class with my wife. During a break in the class, I was looking at some of the demo knives and fell in love with the feel of the Miyabi Santoku...I have used and loved Henckels Pro S knives for years and have a great appreciation for quality cutlery...although I haven't used this knife much so far, I know I will.....I am more of a chopper than a fine slicer and I love the Santoku profile for chopping and scaping up off the cutting board....and it is made by Henckels Japan

Great Knife!
I had nearly given up trying to cook squash (spaghetti & butternut) since its so hard to cut! I tried the demo knife and ended up buying the 7". I spent the first few months accidentally cutting off the sides of my fingernails. I've been using it for about a year and I am very satisfied with my decision to purchase (and still have all 10 fingers).

Love this knife
I was going to buy a knife much less than this one. But fortunately, I was shown me the Santoku knife by Miyabi. It cuts like everything is made of butter. Every slice is smooth and easy. Although I was looking to spend about half of its price, I am very happy with this knife. With the lifetime warranty I should never have to purchase another chef or Santoku knife. Definitely go to the store and test the knife before buying

I have 2 Miyabi knives and I love them. The Miyabi has a more comfortable grip than the Shuns or the Globals. They are sharp and they are my go to knife. Gave them to my girls for Christmas!
