Overall quite impressed by the quality and performance of my Staub cookware . Crepe pan is quite heavy , cooks evenly , tried frying eggs on it . Good results so far . Definitely recommend it for anyone looking for a pan to make pancakes, chapati, roti , tortilla and of course crepes

Seems to Have a Different Quality of Enamel from other Staubs
I have and have used at least a half dozen different Staub pieces from the flat bottom wok to the small cocottes and gratin baking dishes. I have been very happy with my purchases until my first use of this crepe pan. It is impossible to clean. Perhaps it has a different formulation of enamel than all my older pieces. I washed on delivery having removed the three stickers. I very slowly heated it on a large burner set on the lowest level. I allowed it to cool, and then reheated it slowly, while coating the interior with canola oil which adhered in a thin layer consistent with a well seasoned pan.

Just today I made pancakes (crepes) with no additional oil and they cooked and flipped fine. After cleaning everything else and with the pan air cooled, I took it to the sink to wash out with a blue sponge (the same kind I use on a non-stick pan). After rinsing I observed a number of troubling things. When I took a doubled paper towel to dry the pan, small lint-like paper residue adhered to some sticky residue. Using my finger tip I could see the finger prints after touching the residue. Under very bright LCD hood cooking lights, could observe in addition to the sticky residue dark brown splotches.

I rewashed the pan using a small amount of Dawn Detergent with exactly the same results except I used a cotton dish cloth to dry the pan. I got exactly the same result. I then used a tablespoon of baking soda and not even that would remove this sticky residue. It has the consistency of tree sap except it does not seem water soluble. Since I don't know what the chemical makeup is of this residue and until I can remove every bit of it the pan is unusable.

I am current soaking the interior of the pan is a strong solution of Dawn. If that doesn't work I will try a vinegar solution, but I am not hopeful.

I feel I must also mention that users of this pan must be extremely careful when cleaning to ensure any loose pieces of food that get caught in the open crevice where the handle joins the pan could be the cause of a very unsanitary condition. Had I been able to see this in the photographs, I would not have bought this pan.

So five stars for Staub in general but this crepe pan-not so much. I am certainly open to instructions from SLT or Staub on what the problem is.

Best crepe pan ever
Love making crepes on this pan. Crepes cook evenly and batter spreads like magic. I used this pan and a 12” Green pan and I can clearly see the difference in thickness and brownness of the 2 crepes. My mother-in-law got me this when she visited us and I love it!!!

My GO TO Pan
Excellent in retaining heat! I use this to saute vegetables, omelets,
pancakes and of course crepes. Easy to clean, looks great sitting on my stove. It does have some weight but this is great for the heat retention. I love mine so much I am buying two more for my sons!

Staub Never Disappoints
This is by far the best crepe pan I have ever used. After properly conditioning, it cooks perfectly. Even consistent temperature is the key to perfect crepes... this delivers!

I am European and I enjoy European cuisine. More exposure to French cuisine would be great. Americans eat to much fast food and do not make meals social events like we do. MAYBE changing the habit of eating like hungry dogs, will decrease the obesity in USA.

I have a cheap crepe pan with a nonstick surface and my cleaning lady manages to stack all my other pans on top of it (no matter what I do) and has scratched it up. This looks like it will create even cooking temperature across the pan for my crepes (common Hungarian weekly dessert) and will be more durable than the nonstick pan that I have now. I should have bought this from the start.

BEST ANSWER: Like other staub products, it is enamel coated cast iron, it does not need seasoning like uncoated cast iron. Typically crepes have enough butter in them that a slight addition of butter before cooking is all that is needed.

BEST ANSWER: I think it would be difficult not to use a small amount of oil. Perhaps an oil spritzer would work well or a spray. I could not do my crepes without a little oil.
I have a glass top range and the biggest burner is only 9inch in diameter can I still use it without any problem since the griddle is 11 inch diameter. I'm concerned if the crepe will cook uniformly on the outer side as well?

BEST ANSWER: I am sorry I do not know if this would be an issue. The crepe pan I bought was a gift to someone else.
I would think that the outer edges of the 11 in pan would heat up as Any other pan used on the stove.
Can you please please tell me how to use it? I just tried to make crepes - and I'm pretty good at that, but with this pan they burned in the middle while being undercooked on the sides. Please help!

BEST ANSWER: We use the wooden spatula that came with our crepe pan. I would avoid metal tools with this pan and avoid the possibility of scratching the surface. We love the pan!
Do I need to add heated oil or butter to the crepe pan before the batter, please?

BEST ANSWER: The first few times you use it, you'll need to put butter/oil in the pan. Over time it will season, i.e. some of the fat will cook on and adhere to the pan, and eventually you won't need to add fat each time. I can't give you more precise information because it depends on the oil you use, the temperature, how aggressively you clean the pan after use, etc.

BEST ANSWER: The handle on mine is not loose. There is a small metal ring where the wood handle meets the metal part that spins/is loose but the handle is solid. Nothing wiggles or is loose. Hope that helps!
