Better than the Damascus by far.
I first bought the Damascus steel version and everything stuck to the knife so bad I had to return it. This version of the knife is absolutely brilliant. The carbon Steel is so smooth to cut with. Nothing sticks to this blade!

Great knife, would expect a better fit and finish though
I love this knife, the size and heft is perfect in the kitchen. It's a little thick around the spine, but is great for most kitchen tasks. Mine arrived with minor surface rust and fit and finish issues on the handle, nothing that affects performance though.

Early days still, but I'm loving this knife!
For the past 25-plus years, I've been doing just fine with the 8-inch stainless chef's knife that came as part of a Henckels knife set my wife and I received as a wedding present. Then I heard about Kramer knives, and even tried one out in a local Sur la Table. Armed with that experience, and knowledge gained from a whole bunch of online research, I settled on treating myself to a Kramer 10-inch carbon steel knife. It's gorgeous, and the edge on this blade is like nothing I've ever used before. It's incredibly sharp, and has held up extremely well in my first three weeks of ownership. I'm reading up on using waterstones to sharpen the knife, and plan to buy a set soon and start practicing on some of my older knives. The Kramer doesn't need it yet, but when it does, I want to be ready. I just can't say enough about how comfortable it is in hand, how its perfect balance makes food prep easy and fun, and how its edge impresses me every time I use the blade. (I can even cut paper-thin slices of a tomato without touching the tomato with my other hand!) It's a lot of money for a knife, but for anyone who can handle the sticker price and who loves to cook as I do, I can't recommend it more highly.

Not finished well
it's a good knife. The shape is good, feels great in the hand, but the finishing is poor. It's nothing that a good run on the whetstones and taking a file and polish to the handle won't fix, but for the cost, it expected a better quality knife.

Great Knife!
I use this all day every day at my job. It's the sharpest chef's knife I've ever used & sharpens with little to no effort on a stone. I also love the weight & large handle design. Perfect for me.

VERY similar to the original
My sister brought my now brother in-law home last year for Christmas, and that's when I was introduced to Kramer knives. I'm a guitarmaker. I love hearing about things that are made by hand, AND I'd been wondering if any knives were made out of the same steel as my edge tools.

And then, sticker shock. ""They're how much? And you have to get picked in a lottery?""

Later during the same trip we were window shopping in Sir La Table and coincidentally saw these knives. He was skeptical, and I was thrilled. After spending time handling them and playing, I decided to bring a few home and couldn't be happier that I did.

The selling points for me were the fact that they use the same steel as Kramer originals, and the fact that the handles were SO comfortable. And now, after a year of use, after being able to work with my brother in-law's originals, and after him having been able to work with Zwillings, we're both floored. These knives are so good. He says the only difference he really notices is that his 10"" chef's knife is balanced ever so slightly better than mine (emphasis on slightly).

Don't hesitate. These are pricey, but I'm building my collection over time. They're truly works of art that I expect to use my entire life. Even with a critical eye, I can't find a thing to complain about

Quality Control?
Purchased the knife yesterday and although it's impressive, the quality control at the factory evidently needs some work.

The tip of the knife has a significant burr and I could simply remove it and polish it myself, but that shouldn't be necessary with a $350 knife.

I've called the store to arrange an exchange. If there are quality issues with the next one, I'll give up on this product. After all, it is a luxury item and there are vintage high-carbon knives out there that can be ground and sharpened to just as fine an edge

I've been a fan of Henckels for most of my 28 year career in kitchens, and that's why I chose this knife, but I did not expect to be blown away like this. Easily the best knife i've ever touched... thick handle, balanced weight, rounded edges where you're hands wrap around, holds an edge like nothing else, just a joy to work with. I find myself searching for things to cut. This is a knife priced to be on your shelf somewhere, however, you'll want to use this knife everyday, I promise you that because I do!

Best knife I have owned
Rested this knife on a tomato and it, by itself, cut through the skin. Enough said?

It does take care, but really no more than should be given to any quality knife. It is meant to be held as professional chefs do, with thumb and first finger on the blade. Held that way, it has excellent balance and perfect heft. A casual chef might find this blade a bit long. Choose carefully from the available lengths

Love the smooth rounded spine. This is a heavy knife but I find the sharpness with the weight make it feel like the knife is doing most of the work. The more I use it the more I like it.

IIt is the best knife I have every used short of the high carbon steel knife my grandfather, who was an executive chief, left me. I have one of these Zwilling knives; I have a second home; I want another. I have been on Kramerâ??s waiting list for over 7 years; I don't think you can actually get an authentic Kramer knife short of the auction he runs.

I've been in the market for a 10" cook's knife to replace my MAC and Global blades. I had to chance to test drive a friend's Kramer and found the handle size and shape nearly ideal. The balance was terrific ... and it cuts stuff pretty well, as a bonus. ;)

BEST ANSWER: I would not say it requires significant care, you just have to be a bit mindful of how chemicals interact with carbon steel. After each use, I rinse it with water, dry it with a dry cloth, then wipe it with an oiled towel; a process that takes about 20 seconds. When I'm cutting for extended periods, say for a Christmas meal, I wipe it off periodically. With all of that said, the patina is developing nicely, but unevenly in some areas, something that I have no issue with. Its performance is unparalleled, but just understand that your guests who don't know much about carbon steel may think the blade is dirty.

One last thing, which is a little off topic, I've used 8" chef knives exclusively and bought the 10" Kramer because the 8" was out of stock...I could not have been happier with my choice. As ridiculous as it may sound, the knife performs like a 10" but feels closer to an 8"; its very, very balanced.

BEST ANSWER: Kramer knives are made in the USA by Bob Kramer and cost around $1500 for an 8"".The Zwillings version is made by Zwillings in Japan. They use the same steel, but they are not hand forged and heat treated by Bob.The Zwilings knives are a very high quality knife in the shape of a Kramer Original.You will wait years for a hand-made Kramer knife.Shun introduced a Kramer line a couple years ago but these Zwillings are even closer to the real thing

BEST ANSWER: Yes, although not perfectly. At the widest part of the blade, the spine extends beyond the "cutout" in the guard about 1/8", so it's possible to snap the guard closed and have the rear snap hold in place without popping open. But it's not as secure as I'd prefer, particularly when I pack my knives to travel, so I use a friction sleeve instead. Hope this helps.
