Love this pan! Just wish it would last longer before loosing its non stick
This is a fabulous series of pans, not just because they are non stick but because I can cook on a lower flame, the distribution is amazing and my eggs simply seem to float above the surface. This is my egg pan. But after a few years, it seems to loose its non stick ability with eggs although it still works fine for other types of food especially vegetables and meats. So I had it over to my wife who cooks those things and we get another 4 years out of it. I use it every day so it gets a lot of use.

Scan pan is the only non stick pan I will buy. Because its the only one I personally have found that LASTS and WORKS. I have my adult kids hooked on it, too.

Only last about 3 years
12.5" fry pan only lasted 3 years before surface started falling apart. I can't imagine how much of this non-stick surface we have consumed. The surface is now horribly pitted. We babied this pan and took great care to not scratch or abuse the pan. While the $19 super cheap pans from other manufacturers only last 2 years, at 5 times the price, you only get one extra year out of this $99 Scanpan. We originally justified the big price premium thinking that this products surface would not disintegrate so quickly. Still was a nice pan while it lasted, hence 3 stars.

I have been using Scanpans for years. I eat organic and do not want chemicals transferred to my food. I love the way they sear, the heat they can take in the oven, and the way they hold up over time.
I get easy cleaning but also get fond in the pan after a sear for a glaze.
These are great pans.

I had bought the Green Pan last time and they were great at first. Over time they lost there non stick. I was very disappointed. So I am giving Scanpan a try.They had good reviews and don't have any harm full chemicals.

My previous ScanPan has started to stick and the coating has started coming off after 3 years use. I love the pans but the non-stick is not a life time condition.

I just came across Scanpan, so I don't have experience with this line. I like cast iron, but hubby uses nonstick, so this replaces his worn out one. I chose the Evolution, because there's no interior rivets, metal utensils are fine when guests cook on it, and it was on sale! The twin packs are also on sale, but hubby likes the 12.25" size. I did consider the pans with stratanium, but I'll try the ceramic titanium for now. A durable, truly non-stick skillet? I hope it lives up to the reviews.

Does this pan resist warping?

BEST ANSWER: No warping at all and I've been using Scanpans for about 15 years. Had gas in old house. Have electric in this one. Scanpans just last. I have 2 iron woks, not Scanpan that are both warped and 2 out of 3 of my double griddle pans are warped, also not Scanpans. I wash all pots and pans by hand and dry immediately. My Scanpan Classic Saute Pan 10.25" is the pan I use most often.
When I put my skillet in the dishwasher it had a gray coating on the bottom like charcoal. It made my hands and dish towel filthy when I took it out and went to wipe it dry. Anyone else have a problem like this?

BEST ANSWER: This is aluminum oxide forming on the bottom of the pan. Its accumulation is accelerated by using harsh detergents. It is recommended by most to never put anything aluminum in the dishwasher. You can restore the bottom with some Barkeeper's Friend and giving it a light scrub with a non-scratch pad. You will be far happier with your investment to give a quick handwash with regular dish soap. Your pan will last years longer.
What is the difference between the Scanpan Evolution series and the Scanpan Classic series? Is the only difference the handle shape? Thank you!

BEST ANSWER: I haven't bought the Evolution series, but the main difference I see, other than the handles, is the price. I love my Classic series. I think they are both PFOA free. My handles are easy to grip and fine in a reasonably hot oven. If I were buying today, I would choose the Classic and get 2!
Can anyone who has used this on a regular basis for 18 months or longer tell me how well the non-stick surface still performs?

BEST ANSWER: This pan performs very well; however this is my second pan. I had a problem with my first pan because I was using too much heat. When I returned it to the store, I was told to keep the temperature at medium. I have followed that instruction and I am very pleased with this pan.I would certainly by another.

BEST ANSWER: No raised center. It is perfectly flat. This has become my favorite and most used fry pan. Well worth the money, in my opinion.

BEST ANSWER: I have used olive oil and butter mainly for taste or getting nice looking sear on meat. Only thing when using any oil in the pan is that it can build up over time so be sure to scrub the pan with a plastic scrubber to make sure you don't get a buildup which can actually effect the non-stick quality of the pan... I love these pans, purchased for all of my adult children in various sizes as well for myself

Which is the correct size skillet for making omelets?

It depends upon a couple of things.
1. The desired size of the omelet. How much stuff are you going to use. See recipes for ideas.
2. How big an omelet you can handle when folding in half.
For me 10" to 12" inch is best.
If you plan to only use the pan for omelets there are pans that fold. I have never used one of those.
Can the lids go in the oven also?

BEST ANSWER: Yes, they can.
I am having trouble matching the bottom dimensions of the Scanpan to the diameter of radiant burners on my new ceramic glass top. The book says not to use cookware smaller than the burner outline or larger by more than 1/2 inch. I ordered a saute pan which I will have to return because the bottom does not fit any of the 4 burners. Is there a saute pan that fits a 9 3/4" burner or an 11 inch burner?

BEST ANSWER: Don't getting anything smaller than a 3qt. The 3qt sauté pans all of a diameter of about 9-9 1/2". You'll want a 4qt chef's pan or a 5qt sauté.
