My Favorite Daily Go To Knife
Honestly, this is the most amazing general purpose chef-like knife available today (imho). A great knife is defined by first how it feels in your hand and how easy it is to manipulate and this checks those boxes. It maybe clique but it's more than any other I own (BK Carbon, BK Damascus, Miyabi's, Shun's, Masahiro's, you get the drift) feels like an extension of my medium-size hand. The balance is perfect...just in front of the bolster making it slightly blade bias. The blade is stiff (ideal) yet highly nimble. The Damascus pattern is stunning yet understated (not acid etched). I only have one wish that the future "upgraded" version either have a SG2 or Blue Steel core. This knife convinced me to purchase the entire collection of BK Meiji and made me fall in love again with cooking (eating I always loved). As always your mileage may vary so please do yourself a favor and hold them and compare them against the other collections of BK before you decide. Stay sharp!

Flawless piece of cutlery
Bought this as a birthday gift for my wife ... she loves it. The knife itself is a beautiful piece of cutlery, extremely sharp, fine quality, well balanced ... we're very happy with it.

This knife combines the best characteristics of the chef knife and the santoku. It is also a stainless damascus at only slightly higher price than a regular forged blade.

This is my favorite style of knife. The design is very versatile and use it every time I prepare food. I just wanted to step up my game and get a better performing knife which holds an edge longer. Plus I love the looks and craftsmanship!

To what angle should the edge of the 7inc Santoku be sharpened? The description of the knife as a western style blade with a Japanese asthetic. Should I sharpen to 20 degrees as with a western blade, or 15 degrees as with an eastern blade?

Are there left handed knives?

BEST ANSWER: No, not in the Bob Kramer Meiji line, but I'm told this knife is very comfortable to hold for left & right handed users.
