Miyabi pays tribute to the beauty of traditional craftsmanship with the introduction of Miyabi Koh—meaning “light” in Japanese. Classic, simple and comfortable to use in either a Western or Eastern hold, this cutlery collection is as functional as it is beautiful. The faceted pakkawood handle echoes those favored in Japan, and each one is individually weight-tested in a nine-step process to ensure perfect ergonomic design.

Forged from FC61 stainless steel, each full-tang blade is touched by 46 artisans and is hand-honed to an exceptionally sharp 9.5–12 degrees. The Friodur2 hardening process improves the microstructure of the steel for improved cutting performance, corrosion resistance and durability—and the blades are polished to a stunning mirror finish. Sandblasted katana edges, a signature decorative pin and a hand-engraved logo add distinctive Japanese style to the minimalist design.

Love this knife
I purchased this as a birthday gift for my boyfriend. He has very large hands and wanted a knife with a handle that would fit his hand and not hit his knuckles on the cutting board. He loves this knife. He hides it so no one else will use it.

Love this knife!
Great for thinly slicing veg. We have many high quality knifes but this has quickly become our favorite, especially given the price.

Sharp as all heck, had to get used to the grip
Beautiful knife, balance is perfect, handle itself is comfortable, but if you hold the knife properly (i.e., three fingers on the handle and thumb/forefinger on the blade), the grip takes a little gets a little getting used to, the bolster has a sharp edge. The blade feels a little thinner than my last chefs knife, but it's fast, sandblasted edge is beautiful.

Wonderful Knife
This is my first "real" knife! I took the Knife Skills 101 class and it was great getting to handle different types and discover what I liked. We used another Miyabi knife that I liked but felt was a bit heavy. So a very helpful saleswoman showed me this one which had a lighter handle.

I have loved using it. Chopping up tons of potatoes to mash is a breeze or cutting through thick veggies. I would gladly own a whole set of this type of knife. Although I am a bit intimidated with how to keep it professionally sharp ha.

I've been faithfully using my Henckels Four Star 8" chef's knife for 25 years, but I've been wanting something that's more precise. I started researching various chef's knife options. Carbon steel, stainless, gyuto, rockwell hardness..... it's quite the rabbit hole. Basically, I was leaning towards a Japanese style knife, 8"-9", with a hardness of at least 60. There are so many options, and prices can get into the hundreds and hundreds of dollars and more.

I stopped by the local Sur La Table and wanted to hold several and compare blade spine thickness and feel. What caught my eye about this particular knife was the looks, style, specs and price. I was concerned about the lack of full bolster, as I typically hold my chef's knife fairly high up. The lack of a full bolster means my middle finger would be riding the back edge of the good.

I was stuck by how lightweight and well balanced this knife is. It's still tall enough so I can chop without fear of taking my fingers off, and the blade is narrow enough and sharp enough to glide through the food without much effort. It's obviously a little more flexible than my heavy duty Four Star, but the handle shape fits me nicely and the bolster, while not protecting against the heel of the blade, offers my fingers a natural place to hold, so I don't hold it so far up the handle. It's lightweight enough and balanced so I don't have to hold it so far up either.

I've been using it for about a week, and really enjoy the precision and that it takes much less effort (but more concentration) to use. It's not appropriate for certain heavy duty prep chores, but its fantastic for most food prep. I'm glad I bought it.

Great Knife
I've had this knife for about a month now and I love it. This knife is not only razor sharp but is a workhorse. With regular honing, this knife definitely stands up to professional use. This knife makes prep work quick work. Whether you are a pro or a great home cook if you like Asian style knives, you will love this knife. I very highly recommend this knife and Miyabi Koh altogether.

My knife felt good in my hand tho the handle was a little longer than I anticipated. Great cutting edge, food really does come out very thinly sliced and look forward to using this for my other cooking projects.

I just took the Knife Skills 101 class and greatly enjoyed using the Kaizen II during it. Another knife had a lighter handle which felt great to hold and one of the assistants recommended that I try out the Koh - it felt even better than that knife and I'm confident will cut just as well as the Kaizen.

How many (if any) layers of steel are in this knife?

BEST ANSWER: I am not sure about the layers of steel but it is very hard and holds the edge wonderfully and is balanced vey well. It is the very best knife I own. And is a real bargain at this price. I have since bought two more to give as gifts and will buy another for myself.
Are these blades easily chipped or can they break easily if putting pressure on cutting something?

BEST ANSWER: Like all fine cutlery, hand wash the blade after each use, dry well with a soft cotton, or microfiber towel, and store in your traditional cutlery block, or in a drawer, either with a plastic protector sheath, as many knives come with when new, or in a dedicated plastic utensil storage divider.

How much mm is the blade?

BEST ANSWER: About .75mm blade width at the bolster end thinning to about .5mm near the tip. The blade is quite thin and a little flexible. Really sharp and good for slicing sushi, etc., but not well suited for for general chopping and dicing, in my opinion. The blade is too narrow and not rugged enough for that type of use.
What is the thickness of the spine ?

BEST ANSWER: The spine is fairly thin (approx. 1/16th of a inch) compared to most other Japanese knives such as Shun. But overall it's very light and sturdy. A good knife for price.

BEST ANSWER: Just what it sounds like...the dark part near the cutting edge. I think it is mostly cosmetic, a look that a lot of the Japanese knives have. It's a good knife.
My German knives can be sharpened using a 2-step grinder while my Globe knives must be sharpened using a stone. What is the best way to sharpen these knives?
