The curved design—featuring a top that’s wider than the bottom—is modeled on ancient principles for cooking rice, but works equally well for oatmeal, pasta, legumes and more.

Burgundy clay diffuses heat evenly for slow, gentle cooking on the stovetop or in the oven. High sides help prevent food from overflowing during cooking and the upturned rim helps ensure drip-free serving. Plus, the snug-fitting lid seals in heat so food stays warm longer. The durable, attractive glaze is resistant to both scratching and chipping and will not hold baked-on food, so cleanup is always easy. Produced one at a time, each piece of Emile Henry cookware is formed and hand-finished by skilled artisans.

Great rice pot
I have always wanted to try the Emile Henry pots and grabbed this one on clearance. After a disastrous milk experience that was recommended before using, I tried it with a packaged rice product on the stove and it turned out great. Next cooked regular rice and it was also great and have used it for rice instead of a rice cooker ever since. Have since cooked a variety of foods in it to try it out and can’t believe how well it has done. Very happy with purchase.

Not What I expected.
I have several Emile Henry bakeware pieces and really like all of them. But, was very disappointed in this piece.
There is a process of sealing the inside before using. It did not work for me.
Returned it. As usual, Sur La Table was great about the whole
process if returning.
Sur La Table is my favorite place to shop for my kitchen items and for gifts.

Boiling the milk was horrible
The pot is ok for stews, etc, BUT seasoning it was a real pain as, even though I timed the procedures to the minute, getting the burned on black residue was very nasty with Brillo pads scrubbing etc.

Great Pot
Very nice clay pot. Easy to use and keep food warm for long time. Wish they come with a little smaller size, so that cook and eat with the same pot.

Beautiful Cookware
This little pot keeps food warm for over 30 minutes once heated up to at least a simmer. The clay holds in heat, so perfect for serving at the table, using the lid of course. Beautiful little pot.

Can this be preheated like the bread/potato pot?

BEST ANSWER: I am assuming it can, once you have properly seasoned it with milk per the booklet. The technical features talks about precautions, one of which says "do not heat the base of the pot without any ingredients for more than 2 minutes". That means on the stovetop IMO. Preheating it from a cold oven is probably OK. Ken Forkish talks about using this brand to make crusty bread, but not this exact model. Heating it slowly seems to be the key. I have the pizza stone which works great at 500f. This OnePot kept milk simmering for 30 minutes with the heat off after coming to a boil, with the lid on. French cookware is simply the best.
can i use this on a glasstop stove?

BEST ANSWER: Absolutely. Just make sure that your heat setting never exceeds medium--nothing in this line is intended for use over high heat, regardless of heat source.
So what's the deal with having to seal the inside of this pot?

BEST ANSWER: I don't really know, but it wasn't hard. My guess is that ceramic creates a porous surface, and you'd want to season it with a neutral liquid instead of, say something very distinctive you might make the first time, that might flavor what you make in it subsequently. I can tell you though, that this is a wonderful little pot, so versatile and everything i make in it comes out great.
I think the ceramic really does add something to the cooking and makes it taste better!
Do you always have to have liquid in the pot when cooking? If so, can it be as little as 1/4 cup?

BEST ANSWER: Unless you're using it in the oven, e.g. to roast veggies, yes, you need liquid in the pot. I think you need a better understanding of this pot's purpose. It's for throwing a lot of ingredients into a pot simultaneously, including pasta or rice, and having them cook into a casserole of sorts. You can certainly sauté ingredients before adding the balance of what the recipe calls for but this isn't made for what you're describing. The Bread/Potato Pot might be better suited to your needs--the manufacturer has videos on YouTube, that are well worth watching, that demonstrate both products.

BEST ANSWER: Yes but its intended purpose is stove-top cooking--it shines at that. Check out its product videos on YouTube.
Is the bottom completely flat so that the entire base is in contact with the stove? Or is there a rim around the base with the center recessed?

BEST ANSWER: It Is not completely flat. There is a slight inner and outer ridge approximately 1-2 mm in height. Hope that helps. It use it on an elective stove with a glass top with no problems. I dont use it on high...treat it like a cast iron pot. It's slow to heat up but retains heat well. If you use it on high ceramic will tend to crack.
Is this safe for use on an electric range? We're talking exposed coils, not glass.

BEST ANSWER: use a wire diffuser under the pot, like you would for a glass percolator
