Amazing pan!
I use this pan for everything. It was my first Demeyere pan while waiting for the set to go on sale, and to see if I would like it. Well, I love it!

It is heavier than AC tri ply skillet but much better performance. No bowing in the middle under heat, even strong heating on my induction range. No rivets!

Frying performance is far superior. Everything cooks more evenly, crisply, and seems professional grade. Food tastes better somehow.

I’ve made fried eggs, scrambled eggs, salmon. Very little sticks with proper heat and oil use. Cleanup very easy. I am trying not to use any metal utensils to not damage the beautiful finish.

Sorry I bought it
Unfortunately I will be returning this pan. It is the most that I have ever spent on a pan and will never do so again. It requires too much oil/butter to be healthy and is very hard to clean.
Save your money and buy something else.

Excellent tool for the kitchen.
The pan is excellent at distributing heat and providing enormous heatsink. although it heats a bit slowly because of its density and weight it does not cool when the food is placed on the pan..

Heavenly searing!
Heat distribution is even across the entire surface. Excellent for searing scallops, browning butter even bacon! Handle stays cool, easy cleaning (barmaid recommend) the best birthday gift to my daughter (who shops only at Sur!)

I have tasted the top cookware in the market, I own Mauviel and All clad. I recently bought Demeyere and is pretty amazing. The heat is even at the bottom of the pan, handle is more comfortable in your hands, feel better than Mauviel and All clad, the interior is way easy to clean, good quality finish plus 18/10 steel. Extremely happy with the result.

I just installed an induction cooktop and am having to replace my 45 year old cookware. I watched the videos and looked at the cookware in your store and liked the feel of the handle, the fact the handle doesn't get hot, along with the weight of the pan; much lighter than all-clad cookware I have looked at. I particularly chose this searing pan because I love to prepare steaks on the stove; a video demonstrating the proper method sold me on this pan.

Is the outer side of the Demeyere Industry5 series pans appear as polished stainless steel or brushed stainless steel?

BEST ANSWER: the pan is 18/10 stainless with the Silvinox coating. It came with even brushing around the outside of the pan. The process used to get the Silvinox supposedly creates a shinier finish, but dont expect to use it to check for food in your teeth.

BEST ANSWER: I wish I had bought one of these years ago. It is awesome! The difference is that it has very low sides and so the meat never steams. That is sometimes a problem with other pans. If there is too much meat in a pan or if there is too much water in the meat, it sometimes tends to steam rather than sear and brown. In this pan that never seems to happen because the steam cannot be trapped in the pan since the sides are so short. It also cleans up like a dream. I highly recommend it!
Are the sides to low for any kind of sautéeing?

BEST ANSWER: I’ve had this same pan for two years. It has been a great pan. It is a very heavy and flat pan. The rim is about 1 1/4” high. Although it is designed for easy use with spatulas, I often use it for sautéing onions and peppers and sometimes a few scrambled eggs. , it wouldn’t do well with lots of liquid or larger “stir fry” projects.
Can you use a metal spatula with this pan?

BEST ANSWER: No, using a metal spatula or utensil is not advisable. This Demeyere pan is of superior quality, but my only complaint is that the surface actually scratches easily. I would recommend using silicon utensils instead.
What is the diameter of the actual cooking surface?

BEST ANSWER: Hi Melanie,
The flat surface is 8.5 inches, the widest point of the sloped sides is 11.0. You can easily cook three chicken breasts, (although chickens seem to be getting bigger 🙂) without having to edge up on the sides. It is a shallow pan so it isn’t the one I grab for braising, but it I use it a lot to sauté chops or chicken, or steaks. I had thought, because of the 11” that it would sub in for a 12” pan, but without the weight. It really doesn’t work for that since most recipes that require a 12” pan also have too much liquid for a shallow profile skillet. It does work fine for crepes and omelets. A nice piece, i was glad I got it.
Is this dishwasher safe edge lip sealed? And what is the thickness?

BEST ANSWER: The edge is solid. I guess you would call it "sealed" I have never put mine in the dishwasher. When finished cooking a protein, I add a small amount of liquid to the pan while it is still hot. It loosens the fond. Then I add a teaspoon of baking soda and a cup or so of water to the pan and let it sit for half hour or less. Everything is spotless after that process. I finish cleaning it with soap and water then dry it. It is as good as new. The thickness of the rim is 1/8 of an inch. I love the pan and bought one for each of my 3 children and a family friend. Their assessment is the same as mine. As an aside, I have cooked beef, pork, chicken,lamb chops, fish, and even made an omelet. FANTASTiC
