Very happy with it!
This is my first cast iron skillet - and I've been cooking for 40+ years. I had been yearning for an 'artisan' cast iron skillet, the kind with the smooth interior finish, but I just couldn't talk myself into spending $100 to $200 for one.. Cooks Illustrated loves the Lodge skillet as do many other reviewers which really made me think, why do I need to have an 'artisan' skillet?

When Sur La Table advertised this new line from Lodge, I thought this was a skillet that offered many of the same features as the artisan lines but at a very affordable price.

I seasoned the skillet per instructions from Serious Eats and have been using it a couple of times a week since. It browns food beautifully and I feel that it has kicked my cooking up a notch or two. To clean the skillet, I wipe it out first, then give it an gentle scrub with a nylon pad and a touch of Dawn. After a few more uses, I plan to try "the egg test" - the biggie for judging how well a skillet has been seasoned.

Tonight I cooked bacon - Costco's extra thick slices. This pan easily fit 8 slices and notice how evenly cooked they are. The slices were not rearranged during cooking, only flipped over several times during the process.

Do I still want an artisan skillet? Maybe. I may get an 8" size and see if it can replace my small Teflon skillet. But with this 12" Lodge, I have found my go-to skillet for meal prep both on the stove (induction) and in the oven.

Great Pan
This pan is just what I was wanting. I wanted a 12 inch cast iron pan but one that was not as heavy as the typical 12 inch pan. This Chef Skillet is a little lighter because the sides are thinner with the added bonus of being curved. It has the typical Lodge pebbly surface but is still nice and smooth. Cooks eggs over easy with no problem, veggies, and sears steaks beautifully. I am happy with this skillet.

Not too heavy, great sloping sides
This has earned a permanent place on my stovetop. The 10 inch size was all I needed and it's much easier to use and clean than my Mom's old one was, since hers was heavy and had steep, vertical sides.

Is it my imagination or does the food taste better when I use this? However, don't use acidic sauces in it like tomato sauce or that won't happen!

A Winner in This Kitchen

BEST ANSWER: It is more on the smooth side, but the reduced weight is amazing! Old hands and wrists really appreciate that! Everything else is the Lodge product we all know and love!

BEST ANSWER: Yes, you should always oil your cast iron pans after use. The Lodge pans are nice because they are pre-seasoned, but it's up to you to keep the seasoning going.

BEST ANSWER: I actually don’t have the answer to that question.!However I do use the pan for frying, baking and searing meat and/or veggies. My family and I love how well it cooks.

BEST ANSWER: I have 10" and 12". Use both of them regularly. If you can only buy one, get the larger 12". For some recipes there is just not enough room in a 10".
Is this washed with dish soap or plain water?

BEST ANSWER: Cast iron skillets without the enamel coating get washed (rinsed) with hot water and a brush or scraper if needed. Then dry with towel, place on stove, heat, apply a little oil in the skillet and rub into it. Just a very thin layer. There are times you may need to add water to the skillet for a short time to soften the cooked on food before washing. If the skillet happens to get washed with soap, apply a thin layer of oil to all parts of the skillet and heat in oven, then wipe off excess oil. If skillet rusts, scrub rust off and do the same thing. Use your skillet often, that’s the key. Good call on the Lodge brand!
Soap in cast iron? That advice goes against everything I have ever been told or seen. So, why is that the instruction now?

BEST ANSWER: My mother is nearing 96 & always used a small amount of mild liquid soap to soak the pan after she finished up cooking. A quick scrub, dry well, and the seasoning of her pans were never compromised, so that is also the way I do it. My husband chooses to go the other route, and his pan has a build up on it. I think it’s just personal choice (?) Happy Cooking!

BEST ANSWER: I have cooked with cast iron cookware on gas, induction, and traditional cooktops. Cast iron is incredibly versatile in this regard; however, if you drag the cookware you will scratch glass cooktops. You must lift and place...not slide.
