Skillet Discolored
Surprised the bottom of the skillet discolored on the first use on an electric stove-top, using medium heat. Perhaps the pan is defective. All-Clad cookware doesn't have this problem.

Fantastic Pans
I agree with other reviews. It's a great pan. I have the 8" and 11" pans and it browns nicely and very nonstick. I purchased some ceramic nonstick Demeyer pans and right before the warranty was up the pans were no longer nonstick and anything that stuck was very hard to remove. Those pans went into the garbage. I will definitely be buying more of the CS+ line!

Great pan!
Outstanding nonstick qualities and very surprisingly good browning capabilities. It's everything I want in a nonstick pan. I have a set of the original Scanpan from many years ago and it never had very good nonstick qualities so I haven't used it much, but the CS+ is a different ball game. I love it! It replaced a Calphalon nonstick skillet that didn't stand the test of time, so I'm done buying and replacing those over and over.

Wonderful product
Took one of the cooking classes and it came with an 8" CS+ pan. Ended up using it at least 4 more times in the same week.

Got the 11" during fathers day weekend because that was a sale I could not pass up and already used it 7+ times in just one week! Heats evenly on the pan even with an uneven coil burner.
little to no oil used and no sticking of food, including bulgogi bits and seared vegetables on high heat.

Highly recommend getting this version of the Scanpans CS+ and will be updating my non-stick to this, All-Clad and Cast Iron collection.

Can't beat these pans
I have had to buy them for my kids and parents once they tried them. Scan Pans sear, are non stick and dont have any chemical releases that other pans have. Perfect frypan, now to get all the sizes.

Very tedious to clean bottoms: but great cooking performance
This may be a nit-picking review, but I will purchase another brand next time I'm ready.

While I find the 4 Sur La Table CTQ Scanpan Titanium pans I purchased from SLT (locally) some of the best non-stick surfaces I've owned, I'm extremely frustrated by how quickly the bottoms 'tarnish' with even minimal use on my gas range.

2 stars down because I routinely must spend hours cleaning up the bottoms to bring the shine back - much more work than I've ever had to do with my All Clad collection.

Bottom line, I cook daily with my Scan Pans, but hang them out of sight after routine cleaning. Were I cooking commercially, I would not care. What a shame. Serious tools with a cosmetics flaw.

And yes, I've tried all the standard cleaning products, including all 3 of the Bartender's Friend lines (on the bottom only, of course) and the 'tarnish' look comes back quickly time after time.

Scanpan tech support has not been able to help. They tell me the new CS+ cooking surface is improved but the bottoms remain the same. Time to swallow my ego and get back to work scrubbing, I guess. Though not all ego: tests on other cookware have claimed that darker stained areas of pots and pans can absorb heat differently and effect uniform surface temperature consistency. Which I notice regardless of stains while cooking with my scanpans over some of my larger burners. So, who knows?

I notice that one of the competitors SLT sells takes advantage of this Scanpan problem by citing how their pan bottoms don't discolor/tarnish anywhere near the level of some of their competition. I can guess who they're targeting!!

Bottom line, cooking performance is great, but be prepared to once in a while spend a lot of time and energy cleaning the bottoms.

My Mom and I took a Sur La Table class and received the 8" Scanpan CS + as part of the class. Within the past week we've used it at least 5 times and it's worked out great! Saw the sale for Fathers day on the 11" pan and picked one up at my local store. Worked for a quick sear on some bulgogi, and some sauted greens, bacons and onions for lunches. Little to no cleanup!

Two other "non-stick pans" have left the house and these have a permanent spot with our collection!

My nephew has this pan and loves it. It has an oven proof handle and is heavier than most non-sticks. It should be a good pan. Will know more when I use it!!!

Besides the fact that it is nonstick, I selected this pan due to the ability to use metal utensils, and put in the dishwasher. Also, the handle will stay somewhat cool, per the description.

I purchased this pan for myself a few months ago and it was the best purchase I ever made. It cooks evenly and it's a breeze to clean. The fact that it's non stick is a plus. I tried cooking eggs without oil or butter and they came out perfectly moist. I can't say enough about these pans other than I use it for every meal.

What is the difference behind all the letter designations for Scanpan - please rate these from lowest to highest - and I'm not seeing the 11" lid sold separately for the CS+?

BEST ANSWER: I can't say about if there's a strict ranking between the pans but they seem to have some different features. This pan is one of the best non stick surfaces I've used though.

I bought the scanpan professional 11in lid and it fit my cs+ perfectly.
I have induction cooking. I have purchased the CTX small fry pan and it's wonderful. Now I can buy CS+? What's the difference?

BEST ANSWER: From the descriptions published by Scanpan, it appears that CS+ is the latest (and per most reviewers, the best) non-stick, induction-compatible Scanpan ever. I love the one I have - it is the only nonstick pan I have and it performs as well as enamaled cast iron. A lot of reviewers say it performs as well as non-enameled cast, too.
From the photos, some of these pans seem to have more sloped sides than others. I want a pan that easily makes omelettes and sloped sides are very important for that. So which size pans have the more sloped sides?

BEST ANSWER: The Scanpan is a lot slipperier. In my experience, ceramic does not last, it's too easily damaged if you overheat it.
Will the lid with this pan (12.5) also fit the Scanpan CS+ Skillet (12.5)? I don't want to purchase two separate lids. I recently purchased the Scanpan CS+ 8" & 10.25" Skillets, Set of 2. and none of my numerous lids fit them...

BEST ANSWER: 8.5 inches at the contact (bottom). 11 inches inside diameter at the top. Incidentally I've tried some other nonstick sauté pans on our induction cooktop that had poor heating qualities. This is very good.

I cannot find CS+ series on the scanpan official website. They only have CTX and CTQ and others. What is the difference between CS+ and CTX/CTQ? Is this a new model?

BEST ANSWER: All three lines are clad in stainless steel on the exterior, but CS+ (which is exclusive to SLT) is the only line with the new commercial-grade Stratanium+ cooking surface.
Are the listed sizes for the scan pan cs the diameter of pan or the total length with handle?

BEST ANSWER: It is the diameter across the inside of the top of the pan (i.e. it doesn't include the width of the metal)

BEST ANSWER: CS+ uses Stratanium+, which is more textured than the original Stratanium surface on Pro S5. The texture offers superior searing and nonstick release in addition to commercial-quality longevity, but both versions of the Stratanium surface allow you to sear, brown, and sauté as well as cook without oil if you so desire. CS+ pans are clad in stainless steel, so they are heavier and offer better heat retention than Pro S5.
Lids. Is there to buy that matches the pan?

BEST ANSWER: I just purchased the 8" and 10.25" CS+ skillets, and had hoped one of my multitude of existing lids would work, but NOPE. So, I called their 800 # and they transferred me to a store, who shared that the ScanPan Evolution lids would work. You just select the appropriate size for your skillet.

BEST ANSWER: I couldn't find one on the Sur La Table site. I don't know if one exists on another site. I use this pan for sauteing and making Dutch babies in the oven and don't find the lid necessary. If you want a good pan with a lid, check out the Staub (All Day Pan with Lid) pan below. These are the two pans I use the most.

The bottom of my pan turned a light brown when used over a propane glas flame. Have other people experienced this?

BEST ANSWER: Had not noticed before but the bottom of our skillet is a slight copper/brown color on the flat area. We use the skillet 2 or 3 times a week with high performance satisfaction. Our stove and cooktop is natural gas. Millers, Lexington, Ky.

BEST ANSWER: Yes, search for any scanpan lid in the right size. For example, I bought the scanpan professional 11in for the 11in CS+ and it fit perfect.
Unlike Ceramic "Green" pans (which I would avoid like the plague), can you use Olive Oil in these?

BEST ANSWER: I use olive oil in my scan pan with no issues. This has been a great pan...really the best nonstick pan I have owned. Anything from eggs to fish to Szechuan green beans have turned out perfectly in this pan. And it’s iven safe too.
Does the pan have any texture on its non-stick surface?

BEST ANSWER: Re texture, yes. If anything it's as good or better than the previous version which I've had for several years and is the only non-stick I've not had to replace over a similar period of time. Initially I thought that for a non-stick pan that would likely have to be replaced in a couple of years the cost was a bit daunting but it's proven to be not only an excellent performer but double as well.
Can you use non stick sprays to sauté/stir fry in this pan? Trying to cut unnecessary calories...

BEST ANSWER: No. The manufacturer of Scan Pan says do NOT use cooking sprays. It builds up on the surface and leaves a sticky residue. You can brush oil on the item you are cooking, but really it isn't necessary. This is one amazing pan.
How well does it take 450 degree oven for 1 hour?

BEST ANSWER: The only oven cooking I have done with it is a broil at 525 degrees. It is holding up well. The broil is appx 5-7 minutes at a time, and I do it 2-3 times/week. I’ve been doing this since I received the pan at the end of September.
On the 11 inch CS Skillet are the sides really 4” tall? Specs show that they are.

BEST ANSWER: I don’t think so. I placed my pinkie on the flattest area of the inside of the pan and measured maybe two inches deep. I am guessing they are measuring the curve from the flattest section of the bottom of the pan. I hope that helps you.
I like the Evolution line with the no rivets. Is the new coating on the CS+ markedly better to consider upgrade?

BEST ANSWER: It depends on what your priority is, cost or easiest to take care of. I have both the CS+ and Evolution. Both cook well and are easy to clean, but the CS+ browns and sears even better, is easier to clean, and doesn't scratch nearly as easily. Also, the Evolution is POFA free while the CS+ is both PFOA and PFOS free. If cost matters more, the Evolution is still a good pan for less money. Although I love the CS+, I do think it is overpriced.
We cook a lot of omelets and over easy eggs. Will they stick at all in this skillet? I do cook using oil so it wouldn't be a dry skillet.

BEST ANSWER: I cook over easy eggs with no oil at all in my CS+ pans and they never stick. With oil you'll get more flavor, though!

BEST ANSWER: I have not cooked on high heat because the pan conducts heat so well and cooks food so well
without excessive browning I have not had to use high heat....if you give me more information about
what you are cooking, I can give you a better answer.....Do you mean sauce deduction?
You can use higher heat to do that, but super high is not necessary. Hope I gave you some information.
