EXCLUSIVE The culmination of a 10-year partnership between Miyabi and Sur La Table, the exclusive Hibana collection features original blade and bolster design combined with a gorgeous 49-layer Damascus pattern on the blades called “Spark” (The English translation of Hibana) that both strengthens and protects. Handles are triple-riveted and have curved, ergonomic bolsters for the utmost comfort using the pinch grip technique preferred by professional chefs—more so than most Japanese knives on the market. Sleek black and brass spacers on the handle add to the beauty of the knives and add a slight heaviness that promotes sturdiness in hand and maneuverability at the tip. Nakiri offers a traditional Japanese flat-profile shape perfect for chopping, slicing and push cutting—ideal for dicing vegetables, slicing meat, mincing herbs, and cutting fruit or cheese.

great knife
Not a chef. I am an engineer, and outdoors-man, and martial artist. I've dressed my own meat, and used electron-beam equipment finish industrial cutting edges.

This is a beautiful knife- thin, tapering body for a super fine angle. This will be easily sharpened with the right tools. I so did not need this- but love using it. raw veggies taste different with thin slices - so much surface area. I usually work with a thin 416 cleaver- this shape is close to what I am familiar with, but is so different- much harder. The layering is truly artful. This is a delicate tool- I am so happy to have this to work with. I love having tools that spur me to better my own skills.

More knife than I'll ever need- this was a splurge- I'll happily spend years learning to use it well. Love to see this in an even wider (20-25mm / 1 inch) blade, slightly thicker rib.

Get the Miyabi sharpener with this to keep the edge factory keen. Home-grown tomatoes dice nearly perfect. Better than any ceramic blade. Excellent for meat trimming- allows me to keep just the desired amount of fat on.

I might be able to sharpen other reasonably quality knives as sharp and delicate as this, but this just has a feel that says 'this is intended for fine work'. As an engineer- I understand the trade off of hardness and strength- one must use this knife as intended.

The one I got was a display model- still sharp and defect free as brand new. Love to take a quick class to learn some new techniques using this knife. I'm a bull in a china shop- but this has the feel of something hand made. Thank you Miyabi- for sharing your artistry and engineering.

Yes, you can get a $30 knife as sharp and capable as this, but this _will_ hold the edge better and looks truly beautiful to someone who has spent significant time looking at ferrite and martensite grain structures.

Love this blade
Own a few Miyabi Hibana's and they are by far my favorite knives. The Hibana line has it all at a price point that is aggressive for this level of craftmanship and quality.
