There’s really only one way to cook authentic, family-style paella, and that’s in a large, carbon steel pan. The wide, flat cooking surface and shallow sides encourage the formation of soccarat, the delicious caramelized crust for which paella is justifiably famous. Used for centuries in Spain, the paella pan distributes heat evenly and becomes naturally seasoned with use. Safe for the oven, stovetop or outdoor grill. Note: pans over 18" won’t fit on a standard stovetop.

Soccarat Achieved!
I used this pan after taking a Paella class that used it at SLT. This pan achieved Soccarat over the more expensive cast iron Paella pan we used. We made 2 different Paella. This pan, a good recipe and the right ingredients guarantee perfect results and a golden crispy bottom. I read the directions.. Definitely dry immediately after washing with towels and leave open to completely air dry overnight. Check out my Paella :)

Flexible addition for the kitchen
This is a nicely-sized paella pan that seasoned easily and is good for paella, and for any other task that can use more space than a typical skillet provides, such as large fish fillets, or a lot of scallops or shrimp that you don't want crowded as they cook. As with all steel pans, it heats quickly and responds fast to burner adjustments.

I got a big one!
It was bigger than I thought when ordering online, but I'm glad I got a big one. We'll cook paella outside! It's a traditional paella pan and is good quality at a good price.

Very Cheaply Made
Purchased after taking a Paella cooking class and used it the following weekend. The pan rusted and the metal was coming off the bottom of the pan. Very disappointed in the product's poor quality sold by Sur La Table.

Hard pass
I would give this pan a 0 is it was possible. The first time we used it it had this horrible plastic odor when it was heated on the stove. The paella came out ok but no where near as tasty as when we use the cast iron. I washed it immediately and I trusted right before my eyes. I'm not sure what happened but this pan is harder to care for than the cast iron. It wouldn't be an ideal gift for anyone. What a horrible idea for a Christmas gift.

Big Disappointment!
After participating in a Spanish Paella Workshop at Sur La Table and purchasing the pan at the same time recently, I was eager to duplicate the meal at home. I followed the instructions on the pan's label, both before and after its first use. It was oiled and ready to go for its second use. All ingredients were purchased and the recipe made as per the dish made in the workshop and after my first attempt however this time there was a difference. There was such a strong metallic taste to the entire dish that came from the pan. All my dinner guests agreed. The pan may have been inexpensive but the ingredients sure weren't. I couldn't eat the dish and I watched my guests picking at theirs as well. I tried cleaning the pan afterwards and did get it clean however the strong metallic odor was overwhelming. I saw no rust as other reviewers had but the smell of the pan was enough for me. This pan is going straight to the dumpster. What a waste of money especially for last night's meal.

Works perfectly
It does a beautiful job of making a great paella, right down to the crusty socarrat at the bottom. I was delighted with how easy it is to use and to clean.

Very well made of traditional material
I recently made 1 bag (1 Kilogram) of Calasparra Rice (not Bomba) in the 22 inch paella pan along with chicken, sausage, shrimp, clams, mussels, and lobster for 10 guests. The ingredients filled the pan to the rim. Half that amount of rice would have been the proper amount for that size pan. Only half the paella was consumed. Twenty would probably have been just the right number of people for 1 kilogram of rice.
The pan worked great even though I overloaded it.
Being very well made I would definitely recommend it.
It will rust if not cared for properly. Read the instructions and follow them, the pan will last a lifetime. If you do not want to do the work buy stainless steel.

I did not want to invest a ton or money into a paella pan until I know I will use it. I used it in a class, and I liked it. If I find the upkeep is too much but I continue to make paella, I may invest in a more expensive one.

BEST ANSWER: Here is some information I found on SizeOne serving is an approximation based on about 1 1/2 cups of cooked paella per serving if you fill the pan up about 3/4 of the way. This would be an average serving, for a larger entree size portion, you'll want to estimate 1-2 servings per guest.Filling the pan to the top when cooking will allow for a few more servings, but traditionally paella is cooked in a thin (and crispy) layer at the bottom of the pan. Be sure there is enough room for the rice to expand, this will ensure all of the other ingredients cook evenly without overflowing

BEST ANSWER: It's made of carbon steel. It must be seasoned before and after use to prevent rust.
Does this come with a lid?

I don't see that it does from the description ,however not sure how you make paella without a tight fitting lid

BEST ANSWER: Like others said, you do not cook paellas with a lid. Once you add your bomba/calasparra/valencia rice to pan and then add the hot stock (in which toasted saffron has already steeped), you just let simmer uncovered over medium heat. You never stir a paella while the stock is simmering away. Once stock has simmered off and rice is cooked (should be still a little 'al dente') you raise the heat to toast the bottom of the rice. You can judge it is ready by the toasty smell and the crackle sound. Slide the pan around on heat source, if necessary, to do this evenly. You want a thin layer of browned (not burned) crusted rice (called the socarrat). Only once this is ready do you tent it with something like foil and let it rest for about 15 minutes. This lets flavors bloom and the socarrat to release on he bottom of pan. Serve with a metal spatula that will scrape it up in a uniform piece. Enjoy eating it family style to complete the authenticity.

BEST ANSWER: I put a small amount of oil in the pan, enough to spread around the entire inside of the pan I heated it for a few minutes until it started to lightly smoke. .I removed it and rubbed the inside again.
Can the paella pan be used on an induction cook top?

BEST ANSWER: I just bought this as a gift and it IS magnetic and it heats up beautifully on my induction stove top!Apparently (according to the physics forum) there are two crystals in steel, one is magnetic and the other is not. So it depends upon the amount of magnetic steel in the mix. The 400 series stainless steel (martinsetic, e.g., 440C stainless) is generally magnetic, while the 300 series (austinetic, e.g., 304 and 316) is not
Will this work on a flat stove top?

BEST ANSWER: Depends, the burner size is key. For the paella to cook properly the entire bottom surface of the pan needs to have continual contact with heat. I purchased the large pan and it is too wide for my glass top burners. I prepared paella the traditional way....outdoors on a grill. which allowed the bottom of the paella to cook evenly. There is a great Alton Brown Good Eats video of how to. Best of luck!
Where can I purchase a lid to fit the 13.5" Paella pan? I'd like to make a seafood paella but it needs to be covered.

BEST ANSWER: I use 'RSVP Endurance Stainless Steel Universal Lid'. However, a flat lid (nothing fancy) is traditionally all we need for making paella. The RSVP is nicer than needed, but it worked for me. I hope it will work for you too.
Can this pan go on a grill?

BEST ANSWER: Yes it can. It can also be used in a high temp oven. We use these to make pan pizza. I have the larger version that we make paella in but we cook it on a camp stove on our patio (too large for our cooktop). We have been very happy with all of these pans.
Ought this pan work on an induction top stove? I assume it ought to since my carbon steel wok does.

BEST ANSWER: I believe if a magnet will stick to the bottom of the pan then in fact it will work with an induction stove top.

BEST ANSWER: The important thing is to keep the pan dry. You don't want to let it sit in water or air dry. Wash and dry. If you want, you can season with a bit of vegetable oil.
Is this pan dishwasher safe?

BEST ANSWER: No, it must be hand washed and dried thoroughly, then oil must be applied to protect it from rusting. Because some oils are acidic I use mineral oil (purchased at the drug store).
what is the best way to clean this paella pan? I hand washed it but it seems to have a "saffron" haze after it dried.

BEST ANSWER: Most paella pans are not stainless steel. If it is a stainless steel pan just treat it like any other quality pan or pot. Use a good degreaser detergent, scrub and rinse it. Period. Ready to go!

However, if it is NOT stainless, clean it the way you would a typical cast iron food residue.pan. Very limited soap, very gentle scrubbing. Use kosher salt and a sponge to remove any sticking food residue. Dry completely with a paper towel and apply a thin coat of any cooking oil to protect the surface and inhibit rusting/corrosion. NOTE: BEST paella pans are NOT stainless.
