pizza stone
Should one use a pizza stone properly by preheating it, the stone will remove more water from the crust than by placing the pizza on the rack. A pizza crust is supposed to be somewhat like a cracker. This stone works well in doing just that.

Love making fresh pizza, but was worried about it in the summer. Not w/ this. Works just as nice as in my big oven or on the grill, just a lot more convenient for one or two pizzas. Love this stone :

Is Breville pizza stone right size?

I saw another review here that says the Breville pizza stone doesn't fit the Smart Oven - can anyone tell me if that's true before I order?
A shopper on Oct 27, 2012
BEST ANSWER: It is a very snug fit, but the pizza stone does fit into the Smart Oven
Can you cut the pizza on this stone?

BEST ANSWER: NO!!!! Never cut a pizza on a stone. Always use a peel to remove and transfer the pizza to a pan in order to cut it.. You will eventually break the stone and as has been said before, you would risk damaging your cutting blade.
Will this fit/ work in the wolf counter top oven?
A shopper on Jul 14, 2015
BEST ANSWER: I have a Breville Smart Oven, so I am not sure I can address this question. In my Breville, I heat the stone, sprinkle the stone with cornmeal and add the pizza for cooking. This works quite well.
can this pizza stone be used on the BBQ?
A shopper on Jun 22, 2015
BEST ANSWER: I haven't tried it. It just needs to be heated slowly so it would probably work if its not in a direct flame.
Stone touches glass when door is closed. Is this okay?
A shopper on Feb 11, 2018
BEST ANSWER: We don't have this issue so I am not sure but I don't think it should be a problem.
Does the pizza stone fit the compact oven?
A shopper on May 4, 2019
BEST ANSWER: The Breville Smart oven that I own is a BOV845 model. The 13 inch stone just fits and it does a very nice job if you follow the instructions carefully. It also works well in my conventional electric oven.
Remember to remove a frozen pizza from the freezer 15-20 minutes before placing it on a pre-heated stone to prevent cracking the stone.
Does the pizza stick on this stone?
TANIA S on Oct 31, 2016
BEST ANSWER: I've been using a sheet of parchment paper to slide my pizza from the paddle onto the hot stone, I do this mainly to avoid having to wash the stone. I've been very happy with my stone.
Without a small peel to accommodate the 13-inch stone, how do you get the pizza into the smart oven?
Laura F on Jun 6, 2019
BEST ANSWER: I ended up getting an Epicurean pizza peel, which fits the Breville Smart Oven Air, and I place the pizza directly on the oven shelf. I rarely use the stone since I did have diffuculty inserting and removing the stone. Also got the Epicurean rocker slicer which is very efficient. Pizza does not slide around like it does with standard wheel cutter.
Does this work for frozen or otherwise non-home made pizza? I buy the Vicolo pizzas with a cornmeal crust and freeze them.
Leah K on Apr 24, 2017
BEST ANSWER: Yes! I probably wouldn't heat it up ahead of time when cooking a frozen pizza but I heat it up before cooking a fresh pizza. I love this pizza stone !
What's the secret to a crisp crust? I pr-heat, cook between 425 and 450, use breadcrumbs, make a thin crust and don't over-do the toppings (sauce, not wet mozz and occasionally pepperoni, evoo to crust). Help!!! Thanks :)
Irene R on Mar 30, 2017
BEST ANSWER: You want a crisp crust? You and a few million others. In actuality, The perfect pizza crust has been described as a cracker type crust, at least for thin crust and for some, other than just thin crusts. The secret to that has eluded many prospective pizza makers and many have just given up. Those who have found the recipe hold it close. Barring the cracker, most crusts can satisfy, even frozen pizza's crusts. When making your own pizza crust follow the recipe to the letter. Ensure you proof it properly, beat it down, reproof and finish the crust. Preheat the stone to the temperature the pizza will be cooked at. Sprinkle the stone with corn meal and let that heat. Make your pizza. Too many ingredients will ensure a soggy pizza. We like lots pf pepperoni and a small amount of cheese on top of the sauce. The time for baking can be extended or reduced as needed. We like to cook until the center of the pizza bubbles. That generally gives a crisp crust all the way through. Just don't let it burn. As with any recipe, adjust until it's the way you like it. Good luck inventing the "perfect" cracker crust.
