This is the ideal sharpener for converting traditional 20° factory edges of European and American household knives into the high-performance Trizor 15° edge. The versatile XV™ sharpens contemporary double-bevel or single-bevel traditional Asian-style knives, too.

Featuring multi-stages, 100% diamond abrasives and patented flexible stropping discs, the XV creates the Trizor EdgeSelect edge, which helps prolong the life of quality knives by applying a triple-bevel arch-shaped edge that resists dulling longer than conventionally sharpened hollow-ground or V-shaped edges.

The 3-stage process and efficient flexible stropping disks sharpen the edge with minimal metal removal, further helping extend the life of fine knives. Unit also features flexible spring guides to provide accurate control of the sharpening angle, for the thickest or thinnest knife blades, ensuring ultra-sharp edges quickly and easily. Great having sharp knives
I have an old Chef's Choice sharpener that I have used for 20 years religiously. I kept my knives sharpened, but they always seemed like they were missing a few extra swipes through the sharpener no matter how many times I swiped them through. As soon as I tried out this new Chef's Choice sharpener my knives were so much sharper. After only two swipes for each knife for the three sections, my knives were so much sharper than I could get from my old sharpener. It makes cooking much easier with sharp knives.

Really like my new sharpener
Impressed with the sharpness this produces. Sharpened Wusthofs (chef's, paring, Santoku and boning knives) plus some cheaper steak knives and everything is really sharp. Glad I bought it, even though it's expensive.

I was skeptical at first...until I started using the knives I had sharpened!
So, my initial reaction to the sharpener was that it felt a little bit lightly built for the price. The directions that come with it are a little vague. As well, I THOUGHT that I had ordered the version that does both 15 and 20 degree sharpening.

Nope! This one only does 15 degree, meaning that your 20 degree knives (for me Wusthof) will be converted. I did a little bit of reading before deciding to commit.

During the sharpening process I wasn't really sure that the edges were looking all that much better.

I was quickly disabused of that notion once I started using the knives I had just sharpened!

What a difference! They were actually better than new.

In short, you won't be disappointed with this sharpener.

Very good tool fpr the job
I am an experienced knife and blade sharpener, but the Trizor quickly and easily did a great job on every knife in the drawer. Anyone using one comments on the great edge, and I have to imagine I will get even better with it after a few uses. Ver good product whe used correctly!

Does this knife sharpen Japenese style knives?

I do not know the degree but I know that it is not the normal German knife 20 degree angle on the knife.

BEST ANSWER: Yes, it sharpens serrated knives. I would run it through slower than regular knives, though. Paring knives are OK.
Is this good to sharpen ceramic coated knives?

BEST ANSWER: No. Ceramic knives are not capable of being sharpened at home in any way. They can be sent out for sharpening but this machine won't do it and might even be damaged by trying.

BEST ANSWER: I COPIED THIS FROM THE MANUAL
Stage 1: (If your knife is already reasonably sharp, skip Stage 1 and go directly to Stage 2.) If you are sharpening a knife for the first time, if the knife is very dull or if the knife has been sharpened with a sharpening steel, start in Stage 1. Pull the knife once through the left slot of Stage 1 (figure 3) by slipping the blade between the left angle guide and the polymeric spring while pulling the blade toward you and simultaneously moving the blade downward in the slot until it engages the diamond coated disk. You will hear it make contact with the disk. Insert the blade as close as possible to its bolster or handle. If the blade is curved, lift the handle slightly as you sharpen near the tip of the knife, keeping the blade edge approximately parallel to the table. Sharpen the entire blade length. for an eight (8) inch blade, each pull should take about 4 seconds. Pull shorter blades through in 2-3 seconds and longer blades in 6 seconds. Next, repeat with one full length pull in the right slot of Stage 1.
Note: Each time you insert the blade you should simultaneously pull the blade toward you. Never push the blade away from you. Apply just enough downward pressure to make contact with the wheel - added pressure does not modify or speed the sharpening process.

To ensure even sharpening along the entire blade length, insert the blade near its bolster or handle and pull it at a steady rate until it exits the slot. In each stage, make an equal number of pulls alternating in the left and right slots in order to keep the edge facets symmetrical. Generally in Stage 1 you will find a few pairs of pulls, alternating in each (left and right) slot is adequate. If the knife has been heavily steeled, it may take 10-20 pairs of pulls to sharpen completely in Stage 1. We describe below how to check the edge created in Stage 1 before moving to Stage 2. Before moving to Stage 2, it is very important to confirm that a burr (figure 6) exists along one side of the edge. To check for the burr, move your forefinger carefully across the edge as shown in the figure 6 and 7 (below).
(Do not move your finger along the edge - to avoid cutting your finger). If the last pull was in the right slot of Stage 1, the burr will appear only on the right side of the blade (as you hold it) and vice versa. The burr, when present, feels like a rough and bent extension of the edge; the opposite side of the edge feels very smooth by comparison. If a burr exists, proceed to Stage 2.
If no burr exists, make additional pulls in the left and right slots of Stage 1 before proceeding to Stage 2. Slower pulls will help develop the burr. Confirm the presence of the burr and only then proceed to Stage 2. It is always important to have a burr on the edge before moving in Stage 2.

Move fingers across and away from edge

Stage 2: Using the above procedure described for Stage 1, sharpen the blade in Stage 2.
Pull the blade once through the left slot of Stage 2 (figure 4) and once through the right slot (figure 5). for an eight (8) inch blade, take about four (4) seconds for each pull. for longer knives, take about 6 seconds per pull and about 2-3 seconds for shorter blades. In general make about 2-3 pairs of pulls in Stage 2, more if necessary, to create a detectible burr before moving to Stage 3. If the knife is extremely dull, additional pulls in Stage 2 may be needed or, alternately, make additional pairs of pulls in Stage 1, then repeat in Stage 2 before proceeding to Stage 3.
Stage 3: In general only three (3) pairs of pulls in Stage 3 will be necessary to obtain a razor sharp edge. As in Stages 1 and 2, make alternate pulls in left (figure 8) and right slots, pulling the knife through the slots at the same speed used in Stages 1 and 2.
More pairs of pulls in Stage 3 will refine the edge further, creating an edge particularly desirable for gourmet preparations. fewer pulls in Stage 3 may be preferable if you will be cutting fibrous foods as discussed in more detail in the following sections.
Is this an electric sharpener?

BEST ANSWER: Yes, all slots are powered. I've always been somewhat obsessive about my knives and I found this sharpener to be the best by far of anything I've tried over the last 40 years. It takes blades to 15 degrees which is without a doubt the best angle. My knives keep their edge for a long time, in fact all I've had to do in the last 3-4 months is do an occasional quick steel to realign the edge after several days of hard use. Well worth the price of admission !!
Can you sharpen a buck folding knife with a chefs choice trizor without damaging the blade?

BEST ANSWER: Good question. This sharpener is intended for household knives so I would check with the manufacturer before doing attempting to sharpen a buck knife. This sharpener does change the edge as noted in the description on the webpage. My concern would be damaging the sharpener, not the knife.
Does this sharpen pen knives, pocket knives, paring knives, etc?
