Out of Time Onion Rings

Serves: Makes 4 servings

Ingredients:

  • Fried Onions:
  • 2 large yellow onions
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon gochugaru (Korean chili flakes), plus more for sprinkling
  • 2 large eggs
  • ½ cup milk
  • 2 cups panko breadcrumbs
  • Vegetable oil, for frying
  • Fine sea salt

  • Gochujang Mayo and Serving:
  • 1 cup prepared mayonnaise
  • 1 tablespoon gochujang (Korean red chili paste)
  • 1 teaspoon rice vinegar
  • Honey, for drizzling


Procedures:

Peel onions: Peel onions and trim ends, set aside. Cut onions crosswise into ¾-inch thick slices and separate into rings.

Whisk dry: Whisk flour, baking powder, gochugaru and a pinch pinch of salt.

Blend wet: In a blender, blend onion peel scraps, eggs and milk until smooth. Season with a pinch of salt.

Season bread crumbs: Spread out breadcrumbs on a plate and season with salt.

Breading: In batches, coat rings in flour mixture, shaking off excess, then dip in egg mixture, letting excess drip off, then in breadcrumbs, shaking off excess.

Frying: Heat 4" of oil in a medium pot pot over medium-high heat until it registers 360°F with a candy thermometer. Fry rings in batches of 4, turning over once or twice, until golden brown, about 3 minutes per batch. Transfer onion rings to paper towels to drain.

Spicy mayo: Stir together mayo, gochujang and rice vinegar. Serve rings hot sprinkled with salt, more gochugaru flakes, a drizzle of honey and the spicy mayo for dipping.

Notes:
This recipe uses up about-to-expire flour, eggs, milk and breadcrumbs.
